Non-Veg Dishes


Thanks to Tony for another yummy dish, I have changed slightly to suit my taste.

Ingredients 

  • Lamb (Clean and cut into medium to small pieces)
  • Ginger, Garlic,  Green chilly (depending on how spicy you want it, I had put 8) - Chop it coarsely using a chopper
  • Masala - Methi/fenugreek, Chilly , Dhania, jeera powder, Bay leaf, Meat Masala
  • Finely chopped tomato
  • Potato cut into big pieces
  • Red Onions
  • Mint and coriander/cilantro leaves
  • fresh lemon juice
  • Cooking Oil
  • Salt

Cooking Steps

  1. Heat oil, put bay leaves and onions. Fry till onion is golden brown.
  2. Add methi/fenugreek
  3. Add lamb meat and mix it and cook for 10 mins
  4. Add ginger, garlic and green chilly mix
  5. Add masala
  6. Add Potato , mix and cook for 20 minutes
  7. Add hot water and cook it untill gravy consistency is as per your choice & meat and aloo is cooked, I cooked for another 30 minutes in medium/low flame.
  8. Add little lemon juice, coriander leaf and serve hot.

Marinate chicken (cleaned with salt & lemon juice) at least for 30 mins for best result (but I have tried without marinating for 30 mins and it still is goo) with salt, black pepper, turmeric powder, chilly powder and garam/chicken masala and salt to taste.

Put in oven with temperature of 350 F for 20 mins, turn the chicken leg and bake for 20 more mins.

Fry chicken in oil, and once cooked, add little butter (this gives a very good flavour) , remove chicken & in the same oil & little sauce/juice remains of chicken after baking, saute the mushrooms with black pepper, salt & butter. Serve it with the chicken. Great as starters.

Description
It is hot dry curry. It is good with rice and roti.

Ingredients
1. Lamb, chicken or beef - 1 kg
2. Whole red chilli - 30
3. Whole corriander - handful
4. Cloves - 8
5. cinnamon - 1 piece
6. black pepper - 15
7. cumin seeds - 1/2 tsp
8. cardamom - 3
9. turmeric powder - 1/2 tsp
10. Ginger, finely sliced- 1 piece
11. curry leaves - 10 leaves
12. Onion - 2
13. Oil - 2 tbsp
14. Salt - to taste

Preparation
Cut the lamb into small pieces and clean well. Fry ingredients 2-8 with out oil until brown. Powder this with turmeric powder. Mix well this masala powder, lamb, ginger, curry leaves and salt with hand. Add needed water and cook until there is no water. The masala must be well coated with the lamb. Slice onion thinly. Heat oil in a pan, add sliced onion and stirr fry util golden brown. Add the cooked lamb masala to this and stirr well for 5 minutes. Serve hot.

Tips
If the masala is more hot, add more onion. Can add garlic too.
