Dried Prawns/ Khajing fry

Dried Shrimp or Prawns <you get this in asain store or Bangla store>, Thinly Sliced Red Onions, Curry Leaves, Fish masala Powder, Chilly Powder, Salt & Oil 

Marinade Masala – Red Chilly Powder, Coriander Powder, Turmeric Powder, Lemon Juice

Preparation – Remove the head and tail from the dried prawns/shrimps, Wash the dried prawns thoroughly and drain the water, Prepare a marinade using the above ingredients and apply it on the dried prawns. Keep it aside for 10-15 minutes.

Heat oil in a non stick pan and saute onions until translucent, add curry leaves and continue sauteing until the onions begin to lightly brown. Reduce heat and add fish masala powder and chilly powder. Stir fry for a minute.Add the marinated dried prawns and mix everything well. Add salt if required. Stir fry on medium low heat for 5-7 minutes until the masala is nicely coated on the dried prawns.

Good as a side dish with rice.

Lessons learnt: This was great but the small prawn was not crispy & I felt that if the prawns are crispy, it will taste really good. The next time I make it, I will deep fry the dried prawns & mix with the cooked masala.
